Ham and Mushroom Scramble


  • 1/4 cup shiitake mushrooms, sliced thinly
  • 1 cup Kentucky Legend Diced & Cubed Ham
  • 1 tablespoon butter
  • 8 large eggs
  • 1/4 cup 2% milk
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 cup shredded Colby-Monterey Jack cheese


  1. In a large skillet over medium-high heat, add sliced mushrooms and let cook undisturbed for 2 minutes. Flip the mushrooms and cook for 1-2 more minutes, until they turn golden brown and are releasing some liquid.
  2. Reduce heat to medium and continue cooking, stirring occasionally, until all moisture has evaporated and the mushrooms turn a darker color, 5-8 more minutes.
  3. Reduce heat to medium-low and add cubed ham, cooking until lightly browned, about 2-3 minutes.
  4. In the meantime, whisk the eggs, milk, garlic powder and pepper in a large bowl.
  5. Add the butter to the skillet with the mushrooms and ham and allow it to melt. Add in egg mixture and stir every few seconds until almost set.
  6. Add in shredded cheese and cook until completely set. Add additional pepper to taste and enjoy!
