Ham and Mushroom Scramble
Ingredients
- 1/4 cup shiitake mushrooms, sliced thinly
- 1 cup Kentucky Legend Diced & Cubed Ham
- 1 tablespoon butter
- 8 large eggs
- 1/4 cup 2% milk
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1 cup shredded Colby-Monterey Jack cheese
Directions
- In a large skillet over medium-high heat, add sliced mushrooms and let cook undisturbed for 2 minutes. Flip the mushrooms and cook for 1-2 more minutes, until they turn golden brown and are releasing some liquid.
- Reduce heat to medium and continue cooking, stirring occasionally, until all moisture has evaporated and the mushrooms turn a darker color, 5-8 more minutes.
- Reduce heat to medium-low and add cubed ham, cooking until lightly browned, about 2-3 minutes.
- In the meantime, whisk the eggs, milk, garlic powder and pepper in a large bowl.
- Add the butter to the skillet with the mushrooms and ham and allow it to melt. Add in egg mixture and stir every few seconds until almost set.
- Add in shredded cheese and cook until completely set. Add additional pepper to taste and enjoy!
